Collagen Banana Nut Loaf recipe I came up with yesterday. I must say this was really one of the nicest banana breads I’ve had – so moist and delicious-served best warm!
•Gluten free • unrefined sugar • collagen boosting • healthy and full if wholesomeness.
2 cups Gluten Free Oats flour.
3 Overly Ripe Bananas.
1/2 cup ( teacup ) unfiltered Raw Honey.
Tbsp Coconut Oil.2 Eggs.
1 1/2 tsp Baking powder
1 Tbsp macadamia Butter (optional but adds to moisture)
2 heaped tablespoons Collagen
1Tsp Vanilla extract/essence
2 Tbsp Raw Almond flakes.
Preheat oven on 180 Degrees Celsius.Line your bread tin or spray it with Spray and cook and set aside . Blend oats into flour form( if you making your own Oat flour.Lightly Roast your almond Flakes and set aside to cool.In a Bowl Mash bananas and set aside.In another bowl sieve all dry ingredients together – Flour, collagen and Baking powder.In a mixing bowl add your banana, eggs , coconut oil together and whisk till mixture is well blended and almost airy looking in appearance.Add Cinnamon , and vanilla essence and mix well again .Add your Nut butter and mix well. Lastly add your flour mixture to the wet mix and mix till well combined but don’t over mix. Pour your mixture into your tin and Throw your nuts on top .Pop into oven and bake for about 45 min.Serve warm and enjoy ! On above recipe each slice contains about 215 calories .
